We blended premium Margaret River Sauvignon Blanc grapes with local Shiraz grapes from our long term partner in crime LS Merchants. Bringing more bright fruit character to that big berry base, this juicy number has tonnes of attitude, four tonnes in fact! This is our biggest fruit addition for this beer yet and to match weve gone bolder with the ABV too. Taking inspiration from some of our favourite natural wines, for this years hybrid we allowed the juice to start wild fermenting naturally on skins before blending with wort and pitching an expressive wine yeast.
