From the beginning weve been dedicated to working with local producers in the Blue Mountains. This collaboration with our friends at Karu Distillery has been on our list since the early days when we were drinking their gin to help us get through the build at Katoomba. We were able to see the collaboration come to fruition almost a year ago but weve had to keep this secret to ourselves until now.
Presenting Angels’ Share, named after the romantic term in distilling for the liquid lost during maturation, an Imperial Stout aged for 11 months in ex-Karu Rum barrels.
The base stout provides rich, sweet chocolate notes whilst the barrel aging provides complex notes of vanilla, coconut and pineapple thanks to Karus signature copper pot distilled rum fermented from 100% molasses.
